1 lb Brussels, cut in half lengthwise
1 fl oz olive oil
½ tsp kosher salt
¼ tsp black pepper
1 fl oz lemon juice
4 oz bacon, diced raw
1 small shallot, dice
1. Sweat onion and bacon on medium heat until bacon starts to caramelize and shallots begin to cook through
2. Add oil and sprouts to pan, sauté on medium heat for 5-7 minutes until sprouts become fork tender
3. Season with salt and pepper, add lemon juice and toss to coat
